# Directions:

01 - Preheat the air fryer to 375°F for 5 minutes.
02 - Lightly flour a clean surface and roll out the pizza dough into a 12 x 10 inch rectangle.
03 - Spread pizza sauce evenly over the dough, leaving a ½ inch border around the edges.
04 - Evenly sprinkle mozzarella, Parmesan, pepperoni (or vegetables), and Italian herbs over the sauce.
05 - Starting from a long edge, tightly roll the dough into a log and pinch the seam to seal.
06 - Using a sharp knife, cut the log into 24 even pieces.
07 - Brush the cut sides of each roll with beaten egg to help seal them.
08 - Spray the air fryer basket lightly with cooking spray or olive oil.
09 - Place the rolls in a single layer in the air fryer basket, ensuring space between each; cook in batches if necessary.
10 - Brush the tops of each roll with additional beaten egg for a golden finish.
11 - Cook for 8 to 10 minutes, flipping halfway through, until golden brown and crisp.
12 - Allow the pizza rolls to cool for 2 to 3 minutes before serving with extra pizza sauce.

# Expert Advice:

01 -
  • They come together faster than delivery, and you actually know what's inside.
  • One batch makes enough for a crowd, but honestly, you'll want to double it because people can't stop eating them.
  • Your air fryer basically does the work while you pour drinks or set up snacks.
02 -
  • Don't skip the egg wash—I learned this the hard way when my first batch fell apart like they'd been through an emotional breakdown.
  • The air fryer temperature matters; too hot and they brown before the cheese melts, too cool and you're waiting forever for that crispy outside.
03 -
  • Don't overcrowd the basket—those rolls need air to circulate, or you'll end up with some crispy and some soft, which defeats the whole mission.
  • Flip them at the halfway point even though it seems annoying; it's the difference between uneven and absolutely perfect.
