# Directions:

01 - Combine flour, cornstarch, salt, pepper, and paprika in a shallow bowl. Pour buttermilk into a separate bowl.
02 - Dip onion slices into buttermilk, then press into flour mixture. Shake off excess coating.
03 - Heat 1 inch vegetable oil in skillet over medium-high heat. Fry onions in batches 2–3 minutes until golden and crispy. Drain on paper towels.
04 - Spread softened butter on one side of each bread slice.
05 - Place two bread slices butter-side down. Distribute half the cheddar and mozzarella over each. Add crispy onions, then remaining cheese. Top with remaining bread, butter-side up.
06 - Cook on nonstick skillet or griddle over medium-low heat 3–4 minutes per side, pressing gently, until bread is golden brown and cheese melts.
07 - Let rest briefly, cut in half, and serve hot.

# Expert Advice:

01 -
  • The contrast between shatteringly crisp onions and velvety melted cheese creates texture in every single bite
  • Sharp cheddar brings its bold tang while mozzarella creates those gorgeous cheese pulls we all secretly chase
  • Making your own crispy onions sounds fancy but honestly takes about ten minutes and tastes infinitely better than anything from a can
02 -
  • Medium-low heat is your friend here, high heat will burn the butter before the cheese has time to melt properly
  • Slicing the onions as thinly as possible, almost paper thin, ensures they fry up crisp instead of becoming chewy
  • Letting fried onions drain on paper towels removes excess oil that could make your sandwich soggy
03 -
  • Use a box grater for the cheese instead of pre-shredded to avoid anti-caking agents that prevent smooth melting
  • Place a heavy pan or pot lid on top of the sandwich while cooking for more even contact and melting
