Fusilli with Bacon Mushrooms Onions (Printable Version)

01 - 12 oz fusilli

09 - Salt and freshly ground black pepper, to taste

# Directions:

01 - Bring a large pot of salted water to a boil. Add fusilli and cook according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
02 - Heat olive oil in a large skillet over medium heat. Add diced bacon and cook until crispy, about 5 minutes. Remove bacon with a slotted spoon and set aside, leaving the fat in the pan.
03 - Add chopped onion to the skillet and cook until translucent, approximately 3 minutes. Stir in mushrooms and continue cooking until browned and tender, about 5 minutes.
04 - Incorporate minced garlic and cook for 1 minute until fragrant.
05 - Return bacon to the pan. Add drained fusilli and toss to combine. If dry, incorporate a splash of reserved pasta water.
06 - Stir in grated Parmesan cheese and parsley. Season with salt and freshly ground black pepper to taste. Serve immediately with additional Parmesan if desired.
