18 - 2 large ready-made croissant dough sheets or 4 large croissants, halved and hollowed

# Directions:

01 - Preheat oven to 350°F. If using croissant dough sheets, cut into 4 equal squares. Drape each square over a greased oven-safe bowl or ramekin, gently shaping to form bowls. Brush with egg wash and bake for 15–18 minutes until golden and crisp. Cool and remove from molds. If using croissants, slice horizontally and hollow out each half to create bowls.
02 - Heat olive oil in a large soup pot over medium heat. Add diced onion and minced garlic; sauté 2–3 minutes until softened.
03 - Add ground beef to the pot and cook until well browned, breaking up meat with a wooden spoon. Drain any excess fat as needed.
04 - Stir in crushed tomatoes, beef or vegetable broth, tomato paste, oregano, basil, chili flakes if using, salt, and pepper. Bring the mixture to a gentle boil.
05 - Add broken lasagne sheets to the soup. Simmer gently for 10–12 minutes, stirring occasionally, until the pasta is cooked al dente.
06 - In a mixing bowl, thoroughly combine ricotta, grated mozzarella, grated Parmesan, chopped fresh parsley, salt, and pepper.
07 - Taste the soup and adjust seasoning with additional salt and pepper as needed.
08 - Place a croissant bowl on each plate. Spoon hot lasagne soup into each bowl. Top with a generous spoonful of cheese mixture and garnish with fresh basil and extra Parmesan if desired.
