03 - In a large skillet over medium heat, melt butter. Add mushrooms and cook 5 to 6 minutes until tender and browned. Stir in onion and garlic, cooking an additional 2 to 3 minutes until softened.
04 - Sprinkle flour over the vegetables and cook, stirring constantly, for 1 minute. Gradually whisk in milk, cream, and vegetable broth. Simmer until thickened, approximately 5 minutes. Season with salt, black pepper, and nutmeg if desired.
05 - Add the drained green beans to the skillet and toss gently to coat evenly with the sauce.
