01 - Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease each cavity.
02 - In a large mixing bowl, whisk together sweet rice flour, granulated sugar, baking powder, and salt until evenly distributed.
03 - In a separate bowl, whisk together whole milk, eggs, melted butter, ube halaya, and vanilla extract until the mixture is smooth and fully incorporated.
04 - Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined; avoid overmixing to retain the desired muffin texture.
05 - Gently fold in the dried cranberries using a spatula.
06 - Using a scoop or spoon, divide the batter evenly among the prepared muffin cups, filling each about three-quarters full. Sprinkle coconut flakes on top if desired.
07 - Place muffin tin in the oven and bake for 32 to 36 minutes, until the muffins are set and the tops spring back when gently pressed.
