Ingredients

  • Greek yogurt: 2 cups (500 g), plain, full-fat or low-fat
  • Honey or maple syrup: 3 tablespoons
  • Vanilla extract: 1 teaspoon, pure
  • Pomegranate seeds: 1/2 cup (80 g), arils
  • Pistachios: 1/3 cup (40 g), shelled, roughly chopped
  • Coconut flakes (optional): 2 tablespoons, unsweetened

Instructions

Prepare Sheet:
Line a baking sheet (approx. 9x13 inches) with parchment paper.
Mix Yogurt:
In a medium bowl, mix Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
Spread Base:
Spread the yogurt mixture evenly over the prepared baking sheet, about 1/4 inch thick.
Add Toppings:
Sprinkle pomegranate seeds, chopped pistachios, and coconut flakes over the yogurt.
Set Toppings:
Gently press the toppings into the yogurt with the back of a spoon.
Freeze:
Freeze uncovered for at least 3 hours, or until completely firm.
Serve:
Remove from the freezer and break into pieces. Serve immediately or store in an airtight container in the freezer.
