# Directions:
01 - Whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl.
02 - Beat eggs, milk, melted butter, and vanilla extract together until smooth in a separate bowl.
03 - Pour the wet mixture into the dry ingredients and stir gently just until combined, avoiding overmixing.
04 - Gently fold the diced apples into the batter.
05 - Heat vegetable oil to 350°F in a heavy-bottomed pot or deep skillet, maintaining about 2 inches of oil.
06 - Drop heaping tablespoons of batter into the hot oil, frying 3 to 4 fritters at a time for 2 to 3 minutes per side until golden and cooked through.
07 - Remove fritters with a slotted spoon and drain on paper towels.
