I first decided to upgrade my standard peanut butter & banana sandwich after a weekend brunch when I craved something heartier. Adding crunchy toppings brought it to a new level everyone enjoyed.

Ingredients

  • Bread: 4 slices whole grain or sourdough bread
  • Peanut Butter: 4 tbsp natural peanut butter (smooth or crunchy)
  • Banana: 2 ripe bananas, sliced
  • Honey or Maple Syrup: 2 tbsp
  • Chopped Roasted Peanuts: 2 tbsp
  • Granola: 2 tbsp
  • Chia Seeds: 1 tbsp (optional)
  • Ground Cinnamon: 1/4 tsp
  • Sea Salt: Pinch

Instructions

Toast Bread:
Toast the bread slices until golden & crisp.
Spread Peanut Butter:
Spread 1 tablespoon of peanut butter onto each slice while the bread is still warm.
Add Bananas:
Arrange banana slices evenly over two of the slices.
Drizzle Sweetener:
Drizzle each with honey or maple syrup.
Add Toppings:
Sprinkle chopped peanuts, granola, chia seeds (if using), cinnamon, & a pinch of sea salt over the bananas.
Form Sandwiches:
Top with the remaining bread slices, peanut butter side down, to form two sandwiches.
Serve:
Slice in half & serve immediately.
